Sausage & Bean Casserole
1 kg Thick sausages, cooked and chopped into pieces
310g can butter beans, drained, rinsed
300g can red kidney beans, drained, rinsed
2 onions, quartered, cooked
125g bacon, chopped, cooked
455g can tomato soup
1/4 cup water
3 zuccinis, sliced
1 tablespoon chopped parsley
Mix onions, bacon, beans in pan, add tomato soup and water.
Stir until boiling, add sausages. Reduce heat, simmer, covered, for 15 minutes.
Add zuccini, cover, cook 5 minutes. Stir in parsley and serve.
Chocolate Chip Biscuits
90g butter or margarine, melted
1/3 cup sugar
1 egg
1 1/4 cups SR flour
1 packet chocolate chips (approx 100g)
Stir sugar into butter until dissolved. Cool. Beat in egg. Add flour and choc bits.
Taste batter. Drop spoon fulls onto greased trays.
Bake in moderate oven approx 15 minutes.
Yield 30 (or one, depending on how much batter you eat!)
Tuna and Mushroom Pasta (Tonno e Funghi)
450g can tuna
1 large onion or use onion powder or flakes
90g (3oz) butter or margarine
90g (3oz) button mushrooms or 1 tin champignons
300ml carton cream or low fat evaporated milk
2 tablespoons tomato paste
salt,pepper
1 tablespoon basil
Melt butter in pan, add peeled and finely chopped onion,
add drained tuna and basil. Stir over medium heat
until onion is just tender. Chop mushrooms in half,
add to pan, toss lightly. Stir in cream, tomato paste.
Season with salt and pepper. Bring sauce to boil,
remove from heat immediately. Serves 4.
Ginger Pudding
2 Tablespoons Butter/margarine
2 Tablespoons Golden Syrup
1/2 teaspoon bicarb soda, disolved in 1/2 cup milk
1 Cup SR flour
1 teaspoon cinnamon
Beat butter and golden syrup together in microwave bowl.
Add milk/bicarb, stir in. Add dry ingredients.
Cover with glad wrap (prick a couple of holes).
Microwave on high approx 5 minutes.
